Suprisingly enough, I can bake a good poppy seed cake. It is my favorite and therefore my birthday cake every year. the recipe is written for a single layer cake because that is how it was always made in my house. Alternatively, you can put the filling between the layers and frost the stack.

POPPY SEED CAKE

Soak 1/2 C poppy seeds in 1/2 C milk overnight (or at least 2 hours).

Cake: 1 1/2 C sugar 1 C milk 3 t Baking Powder 1/2 t salt 1 t vanilla 1/2 C shortening 3 egg whites poppy seed mix

Stiffly beat egg whites. Mix dry with moist as normal. Fold in egg whites and poppy seeds. Bake @ 350 till toothpick comes out clean (about 35 - 45 min. for a 9x13).

Filling: Cook 1 C sugar, 1 C sour cream, 3 egg yolks, & 1 t flour till thick. Cool and add 1 C chopped walnuts and 1 t vanilla; put over cake.

Icing: Mix 1 C powdered sugar, 1/4 C butter, 2 T cocoa. Moisten with coffee. Put over filling.
